Nothing says the “holidays” better than ginger. These moist and delicious cookies get an extra kick of ginger with Fabbri candied ginger.

2 tsp baking soda
1 tsp ground ginger
½ tsp salt
¾ cup unsalted butter, softened
1 cup brown sugar
1 egg
¼ cup molasses

Whisk flour, ginger, baking soda and salt together in a bowl.

Beat brown sugar and butter in a large bowl with an electric mixer until smooth and creamy.

Add the egg and molasses.

Using a spatula stir in flour mixture. Stir in the candied ginger.

Using a small cookie scoop, scoop the dough onto a parchment lined baking sheet

Refrigerate for at least 2 hours.

When ready to bake, preheat the oven to 350F.

Bake in the preheated oven about 10 minutes. Remove from the oven and transfer to wire racks to cool.
