Super easy and no-bake. Bite sized and full of wholesome ingredients, these energy balls are the perfect treat!

  cup rolled oats
 5 Tbsp raw sunflower seeds
  cup raw pumpkin seeds
  cup unsweetened shredded coconut
  cup bittersweet chocolate chips
 1 Tbsp chia seeds
 ½ tsp salt
 1 tsp vanilla
  cup peanut butter or almond butter
 2 ½ cups Medjool dates, pitted and chopped
 3 Tbsp coconut oil (2-3 Tbsp)

In a food processor combine the rolled oats, sunflower seeds, pumpkin seeds, coconut, chocolate chips and chia seeds. Process until everything is ground into small pieces. Set aside.

Combine the vanilla, peanut butter, dates and coconut oil in the food processor and process until very smooth. You may need to remove the lid and scrape down the sides several times.

Add back the ground seed and nut mixture and pulse to combine. You want the dough to be able to hold its shape when pressed into a ball. If necessary, add a bit of water.

Roll into about 40 balls using the warmth of your hands to press the dough into a tight shape.

Chill about 30 minutes before serving.

Can be prepared a week in advance.
