The classic flavours of cranberry and orange are combined in this delicious loaf that will come in handy for afternoon tea or an easy holiday dessert.

2 tsp baking powder
1 tsp ground cardamom
¼ tsp salt
1 cup full fat Greek yogurt
1 cup white sugar
3 large eggs
1 Tbsp orange zest
½ cup vegetable oil
2 Tbsp orange juice
½ cup dried cranberries
½ cup walnut halves
icing sugar for dusting

Preheat oven to 350°F. (180°C)

Grease a loaf pan and line with parchment paper.

In a medium bowl, sift together the flour, baking powder, cardamom and salt.

In another bowl, combine the yogurt, sugar, eggs, and orange zest, vegetable oil an orange juice.

Add the dry ingredients into the wet ingredients and with a spatula fold the cranberries and walnuts into the batter.

Pour the batter into the pan and bake for 50 -55 minutes.

Let cool on a wire rack. Dust with icing sugar.
