Make sure to pay close attention when cooking a flank steak. Get your grill very hot for the best results and be sure not to cook past medium rare.

1 lb flank steak (1-2 lbs)
3 Tbsp soy sauce
2 tsp sesame oil
3 green onions, minced
4 cloves garlic, minced
2 Tbsp rice wine or sherry
1 Tbsp ginger, minced
1 Tbsp ground sesame seeds, toasted
2 tsp brown sugar
1 ½ Tbsp chili paste (optional)

Place flank steak in a shallow non-reactive dish (such as glass).

Combine the remaining marinade ingredients in a bowl.

Pour marinade over flank steak to completely coat.

Turn steak so it is completely coated in the marinade. Cover and refrigerate at least 2 hours.

Preheat a charcoal or gas grill. Grill steak 6 or 7 minutes per side.

Remove from grill to a rack, loosely tent with foil and let rest at least 10 minutes to allow juices to redistribute. Slice the steak very thin, against the grain.
