Lemon Olive Oil Cake


Anything lemon is a favourite at Jill’s Table. This delicious cake is perfect to partner with any of your favourite berries.

  cup extra virgin olive oil
 3 eggs
 1 cup white sugar
 1 tsp vanilla
 2 lemons' juice and zest2 lemons should yield about 7-8 Tbsp of juice
 1 cup yogurt
 1 ½ tsp baking powder
 ½ tsp salt
 2 cups flour
 assorted fresh berries
 mint for garnish

Preheat oven to 350F (180C). Lightly grease an 8-inch springform pan.

In a large bowl, combine the olive oil and eggs and whisk until smooth.

Add the sugar and whisk until very smooth and the sugar is dissolved.

Whisk in the lemon juice, zest and yogurt.

In a separate medium bowl, combine the baking powder, salt and flour. Stir to combine.

Add the dry ingredients to the large bowl and fold until just combined.

Spoon into the springform pan.

Bake at 350F for 40-50 minutes. Check by inserting a wooden skewer and comes out clean.

Remove from oven and place on a cooling rack. Refrigerate.

Cut into wedges and garnish with mint and fresh berries and serve.
