This crowd-pleaser is an adaptation of a delicious dish brought to us by Jill's Table team member Machiko. Thanks Machiko!

Taco Rice
3 cups cooked warm rice
1 onion, diced
1 yellow pepper, diced
1 lb ground beef
½ cup salsa
1 tsp chili powder
2 ½ cups grated Monterey Jack Cheese
Accompaniments
2 cups shredded lettuce
halved grape tomatoes
limes for garnish

Cook rice according to package directions.

While the rice is cooking, heat the oil in a skillet. Cook the onion and pepper in oil until just soft.

Add the ground beef and cook until no longer pink.

Stir in the barbecue sauce, salsa and chili powder. Simmer a further minute.

When the rice is cooked, spoon onto serving dish.

Spoon the ground beef over top followed by cheese.

Serve with accompaniments.

Serve with tortillas.
