Duck and orange are fabulous flavour partners in this delicious main course salad.

Salad
8 cups mixed greens
2 cups chopped radicchio
2 cups thinly sliced fennel
½ small sweet onion, thinly sliced
1 large navel orange, cut into sections
Dressing
2 Tbsp orange juice
2 Tbsp white wine vinegar
1 tsp orange zest
¼ cup extra virgin olive oil
Salt and pepper to taste

Place the smoked duck breast skin side down in a frying pan.

Brown the duck breast over medium-high heat until the skin is starting to get crispy.

Remove from the pan and let cool. Cut into thin slices and set aside.

Place the greens, radicchio, and onion in a salad bowl. Set aside.

Make the dressing by combining the orange juice, vinegar, orange zest, mustard and soy sauce in a bowl. Whisk together.

Slowly whisk in the oil. Season with salt and pepper to taste.

Drizzle the dressing over the greens and toss.

Place the duck decoratively over top followed by the orange segments. Serve.
