100 g best quality bittersweet chocolate
250 ml 35% whipping cream
½ cup raspberry coulis

Whip 4/5 of the whipping cream (leaving 20% unwhipped) in a well chilled bowl.

In a double boiler, melt chocolate with the remaining (unwhipped) whipping cream. Cool to room temperature.

Gently fold the melted chocolate into the whipped cream.

Divide mousse among wine glasses. Spoon 2 Tbsp. of raspberry coulis into each glass. Chill thoroughly.

Garnish with whipped cream and cocoa. Serve chilled.
