Quinoa is a wonderful grain and one of the most complete sources of plant protein. It has a mild, nutty flavour, an interesting texture, and is a beautiful blank canvas for other ingredients... especially when fresh summer veggies are in season.

4 cups cooked quinoa
1 cup diced cucumber
¼ cup finely chopped cilantro
¼ cup chopped mint
1 cup julienned carrots
1 cup blanched snap peas, snow peas or asparagus
4 green onions, tinely sliced
½ cup toasted sliced almonds
Dressing
1 Tbsp orange zest
¼ cup fresh orange juice
2 Tbsp rice vinegar
1 Tbsp soy sauce
2 tsp chili paste
1 Tbsp sesame oil
salt and pepper to taste
orange slices for garnish

Place the quinoa, cucumber, cilantro, mint, carrots, peas, green onions and almonds in a bowl. Set aside.

In a small bowl, combine the orange zest, orange juice, vinegar, soy sauce, chili paste and sesame oil. Whisk to combine.

Add dressing to salad and toss well.

Adjust seasoning with salt and pepper to taste.

Divide among plates and garnish with an orange slice.
