Fish is the original “fast food” This colourful and tasty dish goes together in minutes and the roasting time is quick too!

4 pieces of cod
2 cups halved grape tomatoes
3 Tbsp extra virgin olive oil

Preheat oven to 425F.

Lightly season the fish with salt and pepper.

Scatter tomatoes and olives over top.

Combine oil and oregano and evenly pour over top of the fish, tomatoes and olives.

Bake for 12-15 minutes.

Serve with orzo.
