With an abundance of local peaches in store in August, this is the perfect time to try this loaf! A bit of thyme added to the recipe provides a unique and savoury flavour.

2 cups all-purpose flour
2 tsp baking powder
2 tsp chopped fresh thyme
1 tsp baking soda
½ tsp ground ginger
4 peaches, pitted, peeled, and diced
¼ cup white sugar
¼ cup firmly packed brown sugar
¼ cup vegetable oil
2 eggs, lightly beaten
1 peach, pitted and sliced

Preheat oven to 350° F (180°C) degrees.

Combine flour, baking powder, thyme, baking soda and ginger in small bowl. Set aside.

Combine diced peaches and sugars. Add the oil and eggs and mix well.

To the peach mixture, add flour mixture about 1/3 cup (175 ml) at a time.

Spoon batter into a parchment lined 9 X 5 loaf pan. Press peach slices into loaf. Bake for 60 to 70 minutes or until a toothpick inserted into the center comes out clean.

Cool for 45 minutes, then slice.
