⅔cuprolled oats
5Tbspraw sunflower seeds
⅓cupraw pumpkin seeds
⅓cupunsweetened shredded coconut
⅓cupbittersweet chocolate chips
1Tbspchia seeds
½tspsalt
1tspvanilla
⅔cuppeanut butter or almond butter
2 ½cupsMedjool dates, pitted and chopped
3Tbspcoconut oil (2-3 Tbsp)

In a food processor combine the rolled oats, sunflower seeds, pumpkin seeds, coconut, chocolate chips and chia seeds. Process until everything is ground into small pieces. Set aside.

Combine the vanilla, peanut butter, dates and coconut oil in the food processor and process until very smooth. You may need to remove the lid and scrape down the sides several times.

Add back the ground seed and nut mixture and pulse to combine. You want the dough to be able to hold its shape when pressed into a ball. If necessary, add a bit of water.

Roll into about 40 balls using the warmth of your hands to press the dough into a tight shape.
