Turn something that usually goes into the composter into a delicious take on pesto.

2 cups washed carrot tops
1 cup spinach leaves
4 Tbsp blanched almonds
1 large clove garlic
¼ cup basil leaves
⅓ cup grated parmesan
½ cup extra virgin olive oil
salt and pepper to taste

Place the carrot tops, spinach, nuts, garlic, basil and Parmesan in the bowl of a food processor.

Pulse until coarse.

With the machine running, slowly drizzle the oil through the feed tube and process until smooth.

Season with salt and pepper to taste.

Note: to make fennel pesto, substitute fennel fronds for the carrot tops
