Maple Walnut Apple CakeĀ 

This is a variation of the much-loved apple cake that has appeared in several of my cookbooks. The original recipe is from the from the Budget Cutters Cookbook that appeared in The London Free Press in November 1982.

 2 cups Ā apples, diced (skins left on)
 1 egg
 ¼ cup white granulated sugarĀ Ā Ā Ā 
 ¼ cup maple syrupĀ 
 ⅓ cup Ā brown sugar
 ¼ tsp cinnamonĀ 
 ¼ cup vegetable oilĀ Ā Ā Ā 
 1 cup choppedĀ walnuts
 1 tsp baking soda
 ¼ tsp salt
 ½ cup chopped dates or raisinsĀ

In a large mixing bowl, combine the apples and egg.

Stir in the white sugar, maple syrup, brown sugar, cinnamon and oil.

Stir in the walnuts.

Stir in the flour, baking soda and salt.

Add the dates and stir.

Spoon into a greased and floured 8-in. (20cm) pan and bake at 350F (180C) for 40-50 minutes.
