This soup is Tuscan simplicity at its best. Great quality olive oil, tomatoes and beans along with some local vegetables. A heaping spoonful of grated cheese is all you will need to round out this satisfying soup!

 2 Tbsp extra virgin olive oil
 1 large onion, diced
 2 stalks celery, diced
 1 large carrot, diced
 3 Tbsp chopped fresh sage (or a combination of rosemary and sage)
 6 cups water
 2 cups sliced green beans or other vegetable
 Salt and pepper to taste
 Grated Parmesan for serving

Place the bean mix in a bowl and cover with water. Soak for about 20 minutes. Drain and set aside.

In a soup pot, heat the olive oil over medium high heat. Add the onion and cook until soft.

Add the celery, carrot and sage and cook a further minute.

Stir in the tomatoes, water, soaked bean mix, and Jill’s Table Tuscan spice. Bring to a simmer and cook until beans are just tender (about 20-30 minutes). Add the green beans and cook until tender (about 5 minutes).

Season with salt and pepper to taste.

Ladle into bowls and garnish with a heaping spoonful of Parmesan cheese.

*Note: 2 cups of cooked sliced Italian sausage, or diced turkey can be added in step 4. Heat for a further 5 minutes.
