This vibrant, colourful salad is the perfect summer main course salad to enjoy the versatile Garlic Box Chili Lime Splash.

Salad
 8 cups mixed greens
 2 avocadoes, sliced
 1 red pepper, thinly sliced
 1 yellow pepper, thinly sliced
 4 green onions
 Dressing (recipe below)
Dressing
 2 Tbsp agave syrup or honey
 2 Tbsp Dijon mustard
 4 Tbsp lime juice
 4 Tbsp vegetable oil
 Salt and pepper to taste

Salad

Place the greens on a large platter.

Scatter the chicken evenly over top followed by the avocadoes, red pepper, yellow pepper and green onion.

Drizzle dressing over top.

Scatter tortilla chips over top and serve.

In a small bowl, combine the syrup and mustard and whisk to combine.

Whisk in the lime juice until smooth.

Slowly whisk in the oil.
