Few things can be as satisfying in summer than a delicious sandwich. Ideal for picnics or an easy weeknight dinner on the deck.

 1 baguette, cut in half lengthwise
 handful of arugula or other greens
 4 slices Italian cheese (such as Fontina), cut in half *
 4 tomato slices, cut in half
 4 skewers
 4 pepperoncini peppers

Place the bottom of the baguette on a clean work surface.

Spread the baguette with either pesto or aioli.

Place greens evenly over top.

Drape the prosciutto over top followed by cheese, peppers and artichokes if using.

Evenly distribute the tomatoes over the top.

Place the top half of the baguette on top.

Secure with skewers that have been pierced with a pepperoncini and black olive.

Cut into 4 even pieces and serve.

*You can also use slices of mozzarella di bufala
