Smoked Trout Salad with Fresh Local Greens

Horseradish in a salad? Who knew! California meets Scandinavia in this easy, nutritious, fresh and healthy salad.

 6 cups local mixed greens
 1 cup blanched baby green beans
 1 carrot julienned
 1 cup halved grape tomatoes
 ½ Quickled Onion recipe
 1 cup flaked smoked trout, or strips of smoked salmon
 ¼ cup vinaigrette recipe
 1 tsp creamy horseradish
 Pepper and Maldon salt to taste

Place the greens on a platter.

Scatter the green beans, carrots, tomatoes, onion and trout over top.

In a small bowl combine the vinaigrette and horseradish.

Drizzle over the salad and season with freshly cracked pepper and a light sprinkling of Maldon salt.
