This easy, delicious and colourful frittata is ideal for breakfast, brunch or dinner. Make it your own by changing the type of sausage or vegetables. If you would like this to be a vegetarian meal, omit the sausage and add more vegetables.

 8 large eggs
 ¼ cup milk
 1 tsp salt
 2 mild Italian sausages, casing removed
 1 onion, diced
 1 small red bell pepper, seeded and sliced
 1 small yellow bell pepper, seeded and sliced
  cup chopped fresh basil
  cup grated Parmesan cheese

Preheat the oven to 375°F.

Crack eggs into a bowl. Add milk and salt and whisk together. Set aside.

Heat your 10-inch skillet over medium high heat and crumble sausage meat into pan. Cook until no longer pink.

Add the onion and peppers and cook until the peppers just start to soften.

Stir in the basil and half of the cheese.

Slowly pour the egg mixture over top, smoothing out the top.

Cook stovetop until the edges begin to set.

Sprinkle remaining cheese over top and transfer to oven. Bake until eggs are set. (about 15 minutes.) Remove from oven and let sit for 5 minutes before serving.

Note: If you are making this in a cast iron skillet, clean up will take a bit longer.
