Another great reason to have your sheet pan at the ready. Ruth-Ann's easy pasta sauce smells fabulous as it is roasting in the oven. Serve over your favourite Rummo pasta.

 1 large sweet onion, sliced
 2 cloves garlic sliced
 8 cups grape tomatoes, halved
 2 Italian sausages (casings removed)
 Grated parmesan cheese

Preheat oven to 425 F.

Place the onion slices, garlic and tomatoes on a sheet pan.

Drizzle with olive oil and lightly season with salt.

Roast in oven for 15 minutes. Remove from the oven and stir.

Break sausage meat into small chunks and add to the sheet pan. Return to the oven and bake until sausage meat is cooked through (about another 15 minutes).

While the sausage is cooking, bring a pot of salted water to a boil. Cook the pasta until al dente.

When pasta is cooked, drain and put in a large pasta bowl. Add the tomato sausage mixture and toss well. Stir in some Parmesan cheese.

Season with Herb Spice Mix to taste.

Serve with additional freshly grated parmesan cheese.
