Great for easy entertaining during the holidays. Enjoy the saltiness of prosciutto with the creaminess of chèvre in this simple appetizer.

 8 oz Chevre or C’est Bon goat cheese, at room temperature
 2 tsp finely chopped chives
 Sea salt and pepper to taste
 18 large shrimp, peeled and butterflied with their tails on
 18 slices of prosciutto, about 3 inches long (large enough to wrap around each shrimp)

Preheat oven to 375°F.

Blend the cheese and chives in a small bowl, season to taste with sea salt and pepper.

Press 1 tsp. of the cheese mixture into the cavity of each shrimp.

Wrap a piece of prosciutto tightly around each shrimp.

Place on a parchment lined baking sheet.

Bake about 8 minutes, or until the shrimp turn pink and the prosciutto starts to crisp.
