This easy and rich dish goes together quickly with just a few ingredients. Serve with your favourite mashed potato recipe. An ideal special occassion meal.

 1 large pork tenderloin, trimmed
 1 Tbsp butter
 1 Tbsp olive oil
 1 shallot, finely diced
 3 cups sliced assorted mushrooms
 1 tsp chopped thyme or rosemary
 ¼ cup white wine
  cup whipping cream
 2 Tbsp Dijon mustard

Preheat oven to 375F.

Season the pork with salt and pepper.

Heat the butter and oil in an oven-proof skillet over medium high heat.

Add the pork and brown on all sides.

Transfer to the oven and cook until the pork registers 140F. Remove from the oven and place the pork on a small rack over a sheet pan. Loosely tent with foil.

Return the pan that the pork was cooked in, to the stovetop over medium high heat. Add the shallot and mushrooms and cook until soft. Stir in the thyme, wine and whipping cream and bring to a boil.

When slightly reduced, turn the heat down to a simmer and stir in the mustard. Season with salt and pepper to taste.

Slice the pork into 1 inch pieces. Place on a platter. Spoon sauce over top.
