This is one of the easiest and most delicious desserts you will ever make using just three ingredients. This delightfully silky, sweet dessert can be garnished with whatever fresh berries you wish.

 3 cups whipping cream (35%)
 ¾ cup sugar
 zest and juice of 2 lemons (about 1/2 cup of juice)
 1 cup fresh berries (either raspberries, blueberries or blackberries)
 Fresh mint leaves for garnish

Bring the cream and sugar to a boil in a medium saucepan. Reduce the heat and simmer for about 4 to 5 minutes.

Remove the pan from the heat and add the lemon zest and juice. Stir. Let sit for about 10 minutes.

Pour through very fine seive into a large measuring cup.

Pour into individual dessert dishes.

Refrigerate for at least 3 hours or overnight.

To serve, garnish with fresh berries and a spring of mint.
