Bring the cream and sugar to a boil in a medium saucepan. Reduce the heat and simmer for about 4 to 5 minutes.
Remove the pan from the heat and add the lemon zest and juice. Stir. Let sit for about 10 minutes.
Pour through very fine seive into a large measuring cup.
Pour into individual dessert dishes.
Refrigerate for at least 3 hours or overnight.
To serve, garnish with fresh berries and a spring of mint.
