6 hard-boiled large eggs
⅓ cup quality mayonnaise
2 tsp Dijon mustard
1 tsp lemon juice
¼ cup finely diced celery
¼ cup finely chopped green onion
½ tsp salt
¼ tsp pepper
8 slices of your favourite multi grain bread
4 leaf lettuce leaves

Peel the eggs and place in a bowl.

Mash coarsely with a fork.

Add the mayonnaise, mustard, lemon juice, celery, green onion, salt and pepper.

Stir to combine.

Place a lettuce leaf on one slice of bread.

Place a scoop of egg salad on top and spread evenly over bottom.

Top with remaining piece of bread.
