Barmbrack is a deliciously rustic traditional Irish tea cake with sultanas and cinnamon. Made with actual tea!

 1 ¼ cups strong black tea
 1 ¼ cups dark raisins (sultanas)
 ¾ cup brown sugar
 1 egg
 4 tsp baking powder
 1 tsp cinnamon

Place the hot tea in a small bowl and add the raisins. Let sit for at least 30 minutes.

While the raisins are soaking, in a large bowl, combine the sugar and egg. Whisk until very smooth.

Add the tea and raisins to the sugar/egg mixture. Stir well.

In another bowl, combine the flour, baking powder and cinnamon.

Add the dry ingredients to the wet ingredients and with a spatula, mix together until just combined.

Spoon into a parchment lined loaf pan and bake in a 350F. (180C) oven for 50–55 minutes.
