An excuse to eat more brownies. Everybody is looking for ways to get more vegetables into their diet and what better way than in a decadent beet brownie.

8ozroasted beets (3 beets is approx. 8 oz)
½cupvegetable oil
½cupbutter
¾cupbrown sugar
1cupsugar
4eggs
1Tbspvanilla bean paste
1 ¼cupsgood quality cocoa
1tspsalt
1tspbaking powder
1 ½cupsflour
1cup70% chocolate chips

Preheat oven to 350°F. Line a 9 X 13 inch baking dish with parchment paper.

Peel the roasted beets. Grate on a box grater.

Melt together the oil and butter. Add both sugars and cream together. Add the eggs and beat for about a minute. Stir in the vanilla. Add the grated roasted beets.

Sift together all the dry ingredients and then fold them into the wet ingredients.

Add the chocolate chips, mixing until just combined. Pour the batter into the prepared pan and bake for 35 to 45 minutes or until a toothpick comes out clean when inserted. Allow to cool before slicing into squares.
