Mint Syrup

In a small saucepan combine the water and sugar. Bring to a boil and stir to dissolve the sugar. Allow to simmer a few minutes.

Once the sugar is completely dissolved, remove from heat and add the fresh mint leaves. Allow the mint to steep as the mixture cools.

Once cooled, strain the leaves using a fine mesh strainer. Place the syrup in a container and refrigerate until cold. This recipe makes 1/2 cup of syrup which will make several cocktails. It will last 1-2 weeks.

Place 4 slices of cucumber in a highball glass, muddle to release some of the cucumber juice. Add 1/2 oz. mint syrup, lime juice and gin. Fill glass with lots of ice cubes then top with 100 ml Fever-Tree Mediterranean Tonic Water.

Garnish with extra cucumber, lime slices and a sprig of mint as desired. Cheers!
