What’s not to love about a hot dog smothered in chili and topped with cheese? Serve this with lots of napkins!
Yields6 ServingsPrep Time30 minsCook Time30 minsTotal Time1 hr Red Bean Chili (makes about 11 cups)
4 strips of thick smoked bacon, chopped
1 large onion, diced
2 lbs lean ground beef
2 tbsp chili powder
1 tbsp ground cumin
1 cup beer
Chili Dogs
6 quality hot dogs or sausages
6 hot dog buns
2 cups of warmed up Red Bean Chili
1 cup of grated Tex Mex cheese
sliced green onions (optional)
Red Bean Chili
1Cook the bacon in a stock pot or Dutch oven over medium high heat until crispy.
2Add the onion and cook until soft.
3Add the chili powder, Weekend At The Cottage tomato garlic dip blend and paprika.
4Add the ground beef and continue to cook until no longer pink.
5Stir in the tomatoes, tomato paste and beer.
6Add the beans and reheat.
7Season with salt and pepper to taste.
Chili Dogs
8Cook the hot dogs on an outdoor grill or in a skillet on the stovetop until light golden.
9Toast the buns gently on an outdoor grill or in a toaster oven.
10Place the hot dogs in the buns. Spoon 1/3 c. of chili evenly over the top of each.
11Sprinkle with the cheese. Place all on a sheet pan.
12Place in a toaster oven until the cheese is melted (or on the bbq on low heat with the lid closed).
13Garnish with onions and enjoy!
