This is comfort food at it best... chili meets pasta and smothered with cheese. Jill's son likes to finish this with a dollop of sour cream. Yum!

2 cups grated Tex Mex cheese
2 chopped green onions
cilantro (optional)
sour cream for serving
1
Place the chili in a saucepan and warm up on medium heat.
2
Bring a large pot of salted water to a boil.
3
Add the pasta and cook according to package directions.
4
When pasta is cooked, reserve 1 cup of the pasta water. Drain the pasta and return to the pot.
5
Spoon 1 cup of the hot chili onto the pasta along with 1/2 of the reserved pasta water and toss to coat (so the noodles don't stick together). Transfer to a pasta bowl.
6
Add remainder of pasta water to the chili and stir. Spoon remaining chili over top of the pasta followed by the cheese, green onions, and cilantro (if using).
