A magical combination of texture and flavour. When you are waiting for local tomatoes to come into season, this salad is a must!

 1 small handful of mixed greens
 2 Tbsp basil leaves, torn
 freshly ground pepper

Divide the salad greens between two plates.

Place three tomato halves on top of the greens.

Slice the buffalo mozzarella into rounds. Arrange on top of the tomatoes.

Scatter the torn basil leaves over top.

Drizzle the salad with some of the oil from the can followed by the balsamic vinegar.

Sprinkle the salad with Maldon flaked sea salt and fresh cracked pepper. Serve immediately.
