Asparagus and Pepper Strata

This delicious dish gets prepped the night before to make an easy pop-in-the-oven dish for brunch.

 8 cups cubed stale, rustic white bread
 5 large eggs
 ¼ cup cream
 2 cups milk
 ¼ cup Parmesan cheese
 3 tsp Peppertree four onion blend
 ½ tsp salt
 pinch of pepper
 2 cups blanched chopped asparagus
 1 cup cooked ham
 1 cup chopped roasted red peppers
 2 cups crumbled, assorted leftover cheese

Scatter half of the bread in a 10 x 10" pan. Set aside.

In a bowl combine the eggs, cream, milk Parmesan cheese, onion blend, salt and pepper. Whisk to combine. Set aside.

Scatter the asparagus over the bread evenly, followed by the ham, peppers and  ¾ of the cheese.

Place remaining bread over the top.

Slowly pour the egg/cream mixture over all.

Cover and place in refrigerator overnight.

Preheat oven to 375F (190C).

Uncover the strata.  Press bread down firmly with your hand to make sure as much of the egg mixture has penetrated the top layer of bread. Place strata in oven. Bake for 30 minutes.

Reduce heat to 350F (175C). Place remaining cheese on top and bake a further 20-30 minutes.

Remove from oven and let sit for 10 minutes.
