Asian Noodle Salad

What could be more delicious than a slightly spicy noodle salad? Add a can of our favourite Callipo tuna and you have a main-course summer salad.

 ¾ lb thin pasta
 1 cup bottle of Umami Wafu Sesame Sauce
 1 tsp Okazu Chili Miso (optional)
 1 sweet red pepper, seeded and thinly sliced
 1 sweet yellow pepper, seeded and thinly sliced
 2 cups sliced baby cucumber
 4 green onions, finely sliced
 1 cup blanched snow peas
 2 Tbsp sesame seeds, toasted
 ¼ cup chopped cilantro

Cook the noodles in a large pot of salted boiling water until al dente. Drain and rinse under cold water.

Place the noodles in a large bowl along with the dressing and chili miso if using. Toss well.

Add the red pepper, yellow pepper, green onions and snow peas and toss well. Add any other optional ingredients as desired.

Sprinkle sesame seeds and cilantro over the top. Refrigerate.

Note: Callipo canned tuna is fabulous in the salad. Add 1 –160 gram tin (including the oil) in step 3.
